  • 20 ounces refrigerated cheese tortellini
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 10 ounces canned diced tomatoes, drained
  • 2 ½ cups beef broth
  • ¼ cup heavy cream
  • 1 ½ cups shredded cheddar cheese or cheese blend
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Brown the ground beef in a large oven-safe skillet over medium-high heat. Drain excess grease.
  2. Add diced onions and minced garlic to the skillet; cook until softened, about 3-4 minutes.
  3. Stir in salt, black pepper, and Italian seasoning until well combined.
  4. Add tortellini, drained tomatoes, and beef broth; bring to a boil.
  5. Cover and simmer on low heat for about 5 minutes. Remove lid and cook until liquid is mostly absorbed.
  6. Stir in heavy cream and half of the shredded cheese; top with remaining cheese.
  7. Broil for a few minutes until the cheese is bubbly and golden brown.
  8. Garnish with chopped parsley before serving hot.
