- 20 ounces refrigerated cheese tortellini
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 10 ounces canned diced tomatoes, drained
- 2 ½ cups beef broth
- ¼ cup heavy cream
- 1 ½ cups shredded cheddar cheese or cheese blend
- 2 tablespoons freshly chopped parsley
Instructions
- Brown the ground beef in a large oven-safe skillet over medium-high heat. Drain excess grease.
- Add diced onions and minced garlic to the skillet; cook until softened, about 3-4 minutes.
- Stir in salt, black pepper, and Italian seasoning until well combined.
- Add tortellini, drained tomatoes, and beef broth; bring to a boil.
- Cover and simmer on low heat for about 5 minutes. Remove lid and cook until liquid is mostly absorbed.
- Stir in heavy cream and half of the shredded cheese; top with remaining cheese.
- Broil for a few minutes until the cheese is bubbly and golden brown.
