  • 2 heads of broccoli

  • 2 cups low sodium chicken broth

  • ½ tsp. salt

  • 1 lemon
  • ¼ cup Parmesan
  • 1 Tbsp. red pepper flakes

Instructions

  1. Heat a large nonstick skillet over medium-high heat and add olive oil.
  2. Cook chopped chicken sausage and broccoli stems for 4-5 minutes until browned.
  3. Stir in minced garlic and cook until fragrant (about 30 seconds).
  4. Add orzo and toast for 1 minute.
  5. Pour in chicken broth, salt, and pepper; bring to a boil.
  6. Add broccoli florets; stir briefly.
  7. Cover and simmer on low for 8-12 minutes, stirring occasionally.
  8. Remove from heat; mix in lemon juice, top with Parmesan cheese, and sprinkle red pepper flakes.
