Ingredients
- 1 lb chicken tenders
- 3 tablespoons minced garlic
- 2 tablespoons olive oil
- 1 stick butter (1/2 cup)
- 1/2 teaspoon red pepper flakes
- 3/4 cup dry white grape juice
- 1 1/2 cups uncooked white rice (basmati, long grain, or jasmine)
- 2 3/4 cups low sodium chicken stock
- 1/2 cup freshly grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season chicken tenders and cook in olive oil over medium-high heat for about three minutes on each side; reduce heat to low.
- Add two tablespoons of butter and one tablespoon of minced garlic; sauté until fragrant. Remove from heat, cover with foil.
- In the same skillet, increase heat to medium-low, add remaining butter and garlic; pour in grape juice and simmer for 3-5 minutes.
- Add uncooked rice to the skillet and pan-fry for five minutes while stirring constantly.
- Pour in chicken stock along with salt and red pepper flakes; bring to a boil then reduce heat and cover. Simmer for about twenty minutes until rice is tender.
- Stir in cooked rice and half a cup of Parmesan until melted. Arrange chicken on top.
- Prepare garlic butter sauce by mixing melted butter with reserved juices and parsley; drizzle over the dish before serving.
