  • 2 tablespoons olive oil (or avocado oil)
  • 2 tablespoons coconut aminos (or soy sauce)
  • 2 tablespoons maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary leaves
  • ¼ cup chicken broth
  • 6 medium bone-in, skin-on chicken thighs (approximately 3 pounds)
  • Salt to taste

Instructions

  1. Prepare the sauce by mixing fresh cranberries, olive oil, coconut aminos, maple syrup, minced garlic, rosemary leaves, and chicken broth in a bowl.
  2. Preheat your oven to 375°F (190°C).
  3. Heat a skillet over medium-high heat, add olive oil, season the chicken thighs with salt, and sear them skin-side down for about 5 minutes until browned. Flip and sear for another 5 minutes.
  4. Pour the sauce over the chicken and scatter extra cranberries around.
  5. Transfer the skillet to the preheated oven and bake for approximately 30–35 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let it rest for a few minutes before serving. Garnish with fresh rosemary sprigs.
