Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/4 cups rolled oats

- 1/2 teaspoon baking soda
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 (14 oz.) can sweetened condensed milk
- 1 tablespoon lemon zest
- 1/3 cup lemon juice (about 2 1/2 large lemons)
- 2 large egg yolks
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the flour, rolled oats, salt, and baking soda using a whisk.
- In another bowl, mix the granulated sugar and brown sugar with melted butter and vanilla until smooth.
- Gradually add the dry ingredients to the wet mixture; combine gently, reserving one-third for topping.
- Press the remaining mixture into the bottom of the prepared baking pan.
- For the filling, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and additional vanilla in another bowl until smooth.
- Pour the filling over the crust layer and sprinkle with reserved oat mixture on top.
