  • 1 cup Old fashioned oats
  • 1/4 cup Maple syrup (or honey)
  • 24 oz. AE Dairy cottage cheese
  • 1 tbsp Vanilla extract
  • 3/4 cup Peanut butter (softened)
  • 1/2 cup Protein powder (chocolate or vanilla)
  • 1/2 cup Unsweetened cocoa powder
  • 1 tbsp Coconut oil (melted)
  • 1 cup Chocolate chips (divided)
  • Flaky sea salt (optional)

Instructions

  1. In a blender, combine old fashioned oats, maple syrup, AE Dairy cottage cheese, vanilla extract, and peanut butter. Blend until smooth.
  2. Transfer the mixture to a mixing bowl and fold in protein powder and unsweetened cocoa powder until well combined.
  3. Roll the mixture into tablespoon-sized balls and place them on a sheet pan. Freeze for 5-10 minutes.
  4. In a microwave-safe bowl, melt remaining chocolate chips with coconut oil in 30-second intervals until smooth.
  5. Dip each frozen bite into the melted chocolate mixture, then return them to the sheet pan and sprinkle with flaky sea salt if desired.
  6. Chill in the fridge until set completely before enjoying.
