Ingredients
- 1 cup Old fashioned oats
- 1/4 cup Maple syrup (or honey)
- 24 oz. AE Dairy cottage cheese
- 1 tbsp Vanilla extract
- 3/4 cup Peanut butter (softened)
- 1/2 cup Protein powder (chocolate or vanilla)
- 1/2 cup Unsweetened cocoa powder
- 1 tbsp Coconut oil (melted)
- 1 cup Chocolate chips (divided)
- Flaky sea salt (optional)
Instructions
- In a blender, combine old fashioned oats, maple syrup, AE Dairy cottage cheese, vanilla extract, and peanut butter. Blend until smooth.
- Transfer the mixture to a mixing bowl and fold in protein powder and unsweetened cocoa powder until well combined.
- Roll the mixture into tablespoon-sized balls and place them on a sheet pan. Freeze for 5-10 minutes.
- In a microwave-safe bowl, melt remaining chocolate chips with coconut oil in 30-second intervals until smooth.
- Dip each frozen bite into the melted chocolate mixture, then return them to the sheet pan and sprinkle with flaky sea salt if desired.
- Chill in the fridge until set completely before enjoying.
