  • 15 ounces ricotta cheese
  • 16 ounces mozzarella cheese, freshly grated, divided
  • 6 ounces parmesan cheese, freshly grated, divided
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup carrots, diced
  • 3/4 cup onion, diced
  • 1/2 cup celery, diced
  • 1 1/4 pounds lean ground beef
  • 1/2 pound ground chicken italian sausage
  • 129 ounce can tomato sauce
  • 129 ounce can crushed tomatoes in puree
  • 2 tablespoons tomato paste
  • 1/2 cup red grape juice
  • 2 tablespoons Italian Herb seasoning
  • 13 teaspoons granulated sugar
  • 116 ounce lasagna noodles
  • 8 ounces provolone cheese slices
  • More basil to garnish, optional

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, 8 oz mozzarella, 2 oz parmesan, egg, salt, black pepper, parsley, and basil. Refrigerate.
  3. In a skillet over medium heat, sauté garlic in olive oil until fragrant. Add diced carrots, onions, and celery; cook until softened.
  4. Stir in ground beef and ground chicken; cook until browned. Drain excess fat if necessary.
  5. Add tomato sauce, crushed tomatoes, tomato paste, grape juice, Italian herb seasoning, and sugar; simmer for 20 minutes.
  6. In a greased baking dish, layer meat sauce, noodles, ricotta mixture, and mozzarella three times. Top with remaining meat sauce and provolone slices.
  7. Cover with foil and bake for 30 minutes; uncover and bake an additional 15 minutes until bubbly.
