  • 2 3/4 cups chicken broth
  • 1 cup orzo pasta
  • 3/4 cup heavy cream
  • 1/2 cup sun-dried tomatoes (diced)
  • 1 cup spinach (diced)
  • 3/4 cup parmesan cheese (shredded)

Instructions

  1. Season chicken thighs with smoked paprika, Italian seasoning, salt, and pepper. In a large skillet, heat sun-dried tomato oil over medium heat and cook the seasoned chicken until golden brown on both sides. Remove and set aside.
  2. In the same skillet, melt butter and sauté dried shallots, minced onion, and garlic until fragrant. Add diced sun-dried tomatoes, tomato paste, Italian seasoning, smoked paprika, salt, and basil; cook for one minute.
  3. Pour in chicken broth and bring to a simmer. Stir in orzo pasta and cook until al dente (8-10 minutes).
  4. Stir in heavy cream and spinach until wilted. Return the cooked chicken to the skillet to combine.
  5. Sprinkle with parmesan cheese before serving hot.
