  • ¼ cup granulated sugar
  • 1 large egg
  • 2 tablespoons pure maple syrup
  • ½ teaspoon maple extract
  • ¼ cup finely chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream butter with sugars until fluffy.
  4. Add egg, maple syrup, and maple extract into the butter mixture; mix well.
  5. Gradually combine dry ingredients into the wet ingredients until just mixed. If desired, fold in pecans.
  6. Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart.
  7. Bake for about 10 minutes or until edges are lightly golden; cool on the baking sheet briefly before transferring to a wire rack.
  8. For optional icing, melt butter in a saucepan and whisk in powdered sugar, maple syrup, milk or cream, and maple extract until smooth.
