  • 3 tablespoons ricotta cheese
  • 1/8 teaspoon salt
  • 23 garlic cloves (pressed or minced)
  • 3 large eggs
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 300°F.
  2. In a mixing bowl, combine ricotta cheese, salt, and garlic until smooth.
  3. Separate eggs: place yolks in the ricotta mixture and egg whites in a separate clean bowl.
  4. Stir egg yolks into the ricotta mixture until fully combined.
  5. Add cream of tartar to egg whites and whip at high speed until stiff peaks form (about 5 minutes).
  6. Gently fold whipped egg whites into the ricotta mixture without deflating them.
  7. Line two baking sheets with parchment paper and scoop about 1/4 cup of batter for each round (approx. six rounds per sheet).
