  • 1 large shallot (finely diced)
  • 2 teaspoons chopped parsley
  • 2 cups cooked lobster tail meat
  • 1 teaspoon lemon juice
  • 1/4 cup ricotta cheese
  • 2 tablespoons Asiago cheese
  • 1 tablespoon mascarpone cheese
  • Wonton wrappers
  • 1/2 cup melted butter
  • 4 tablespoons lemon juice
  • 1/4 cup heavy cream

Instructions

  1. In a large mixing bowl, combine olive oil, shallot, parsley, lobster meat, lemon juice, ricotta, Asiago cheese, and mascarpone until well mixed.
  2. Place about a tablespoon of the filling onto each wonton wrapper. Moisten edges with water and fold over to seal.
  3. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Arrange ravioli on the baking sheet and brush lightly with melted butter. Bake for about 15 minutes until golden brown.
  5. For the sauce, heat melted butter, lemon juice, and heavy cream in a small saucepan until warmed through.
  6. Serve baked ravioli hot drizzled with lemon butter sauce and garnish with parsley.
