  • 4 lobster tails, raw
  • 10 cups water
  • 4 tablespoons butter
  • 1 shallot, minced
  • 2 large carrots, peeled and diced
  • 3 celery stalks, diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh thyme, minced (plus extra for garnish)
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1.5 cups dry white grape juice
  • 5 cups lobster stock
  • 1 cup heavy cream
  • 1 teaspoon kosher salt (more to taste)
  • 1/2 teaspoon pepper

Instructions

  1. Bring a large pot of water to a boil. Add lobster tails and cook for about 5–7 minutes until bright red. Remove tails, cool slightly, extract meat, and chop into bite-sized pieces.
  2. In the same pot, melt butter over medium heat. Add shallot, carrots, celery, and garlic; sauté for about 5–7 minutes until tender.
  3. Stir in thyme and tomato paste; cook for an additional minute before adding flour. Gradually whisk in dry white grape juice followed by lobster stock. Bring to a gentle simmer.
  4. After simmering for about 20 minutes, stir in heavy cream along with salt and pepper. Heat through without boiling; adjust seasoning if necessary.
  5. Fold in chopped lobster meat and let cook for an additional few minutes until heated through. Serve hot garnished with fresh thyme.
