  • 4 tbsp green onions, sliced

  • ½ cup cooked beef bacon bits or chopped turkey bacon

  • 2 tbsp butter (for melting inside each potato)

  • Fresh parsley or chives for garnish (optional)


Instructions

Step 1: Bake the Potatoes

  1. Preheat your oven to 400°F (200°C).

  2. Scrub the potatoes clean, then pierce each one a few times with a fork.

  3. Rub with olive oil and sprinkle with sea salt.

  4. Place directly on the oven rack or on a baking sheet. Bake for 50-60 minutes until tender when pierced with a knife.

  5. Once done, set aside and let them cool slightly for handling.

Step 2: Prepare the Steak Bites
6. While potatoes are baking, pat the steak pieces dry with paper towels.
7. Season steak bites with salt, pepper, and smoked paprika.
8. Heat olive oil in a skillet over medium-high heat. Add steak in a single layer without overcrowding.
9. Sear for 2-3 minutes per side, until browned and just cooked through.
10. Reduce heat to medium, add butter, minced garlic, and Worcestershire sauce.
11. Toss steak bites for 30 seconds until garlic is fragrant. Remove from heat and let rest.

Step 3: Assemble the Loaded Potatoes
