Ingredients

  • 1 cup granulated sugar
  • 5 cups cold water (divided)
  • 1 ¼ cups fresh lemon juice (from approximately 710 lemons)

Instructions

  1. In a small saucepan, combine 1 cup of granulated sugar and 1 cup of cold water. Heat over medium-low while stirring until the sugar dissolves completely. Set aside to cool.
  2. Squeeze lemons using a juicer or reamer until you have 1 ¼ cups of fresh lemon juice. Strain out any seeds and pulp if desired.
  3. In a pitcher, mix the cooled simple syrup, lemon juice, and remaining 4 cups of cold water. Stir well.
  4. Taste and adjust sweetness or tartness as needed by adding more lemon juice or water.
  5. Chill in the refrigerator for several hours or serve immediately over ice.
