  • 5 cups vegetable broth

  5. Pour in 4 cups of vegetable broth; bring to a boil then reduce heat to simmer uncovered for 30-35 minutes until lentils and rice are tender.
  6. Add lemon juice; taste for seasoning adjustments.
  7. Blend soup to your desired consistency using a hand blender.
