Ingredients

Scale
  • 2 large apples, peeled, cored, and diced

  • 200g (1 cup) granulated sugar

  • 200g (1¾ cups) plain flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp salt

  • 100g (½ cup) unsalted butter, melted and cooled

  • 2 large eggs

  • 1 tsp vanilla extract

  • 100ml (½ cup) milk

  • Optional: ½ cup chopped walnuts or raisins

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 180°C (350°F).

  2. Grease a 9-inch round cake tin and line it with parchment paper.

Step 2: Prepare the Apples
3. Peel, core, and dice the apples into small chunks. Set aside.

Step 3: Mix the Dry Ingredients
4. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 4: Combine the Wet Ingredients
5. In a separate bowl, whisk the melted butter, eggs, vanilla extract, and milk until smooth.

Step 5: Make the Batter
6. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
7. Fold in the diced apples and any optional add-ins like walnuts or raisins.

Step 6: Bake the Cake
8. Pour the batter into the prepared cake tin and smooth the top.
9. Bake for 40–45 minutes or until a skewer inserted into the center comes out clean.

Step 7: Cool and Serve
10. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack.
11. Serve warm or at room temperature, optionally with a dusting of powdered sugar or a scoop of vanilla ice cream.

Notes

  • Use Firm Apples – Varieties like Granny Smith or Braeburn hold their shape well during baking.

  • Don’t Overmix – Stir the batter until just combined to keep the cake tender.

  • Enhance Flavor – Add a pinch of ginger or cardamom for extra warmth.

  • Test for Doneness – Use a toothpick or skewer to check if the cake is fully baked.

  • Store Properly – Wrap the cake tightly to keep it moist for days.
