  • 1/2 cup diced onions
  • 3 garlic cloves (minced)
  • 1 tablespoon unsalted butter
  • 1 1/2 cups arborio rice
  • 1/2 cup dry white grape juice
  • 3 1/2 cups broth
  • 1/2 cup grated parmesan reggiano cheese
  • 1 pound raw shrimp (peeled and deveined)
  • Old Bay Seasoning
  • salt and pepper to taste
  • 1 cup fresh spinach
  • 7 oz asparagus (chopped into small pieces)
  • 23 tablespoons fresh lemon juice

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil, diced onions, and minced garlic; cook until fragrant.
  2. Stir in unsalted butter until melted, then add arborio rice and coat each grain.
  3. Pour in white grape juice and broth; stir well.
  4. Seal the lid and set to pressure cook on high for 8 minutes.
  5. While cooking, season shrimp (or chicken) with Old Bay seasoning, salt, and pepper.
  6. Once cooking is complete, perform a quick steam release.
  7. Switch to sauté mode; add seasoned shrimp, Parmesan cheese, spinach, and asparagus. Cook until shrimp is pink and spinach wilts.
  8. Drizzle with fresh lemon juice before serving warm.
