  • Zest of 1 orange
  • 1/2 cup orange juice
  • 1/4 cup brown sugar (or honey)
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup long grain white rice (rinsed)
  • 1 cup water

Instructions

  1. In a bowl, whisk together orange zest, juice, brown sugar, soy sauce, vinegar, garlic, ginger, and red pepper flakes (if using).
  2. Cut chicken into 1-inch pieces and sauté in olive oil in the Instant Pot until browned.
  3. Pour the orange sauce over the chicken and stir well.
  4. Place a trivet inside the pot and set an oven-safe bowl with rinsed rice and water on top.
  5. Close the lid and cook on high pressure for 4 minutes.
  6. Allow natural pressure release for 10 minutes before venting any remaining steam.
  7. Remove the rice bowl; thicken sauce with cornstarch mixed with water by sautéing briefly.
  8. Serve over rice garnished with green onions and sesame seeds.
