Ingredients
- Zest of 1 orange
- 1/2 cup orange juice
- 1/4 cup brown sugar (or honey)
- 1/4 cup low sodium soy sauce
- 3 tablespoons apple cider vinegar
- 2 cloves garlic (minced)
- 1 tablespoon minced fresh ginger
- 1.5 pounds boneless, skinless chicken breasts
- 1 cup long grain white rice (rinsed)
- 1 cup water
Instructions
- In a bowl, whisk together orange zest, juice, brown sugar, soy sauce, vinegar, garlic, ginger, and red pepper flakes (if using).
- Cut chicken into 1-inch pieces and sauté in olive oil in the Instant Pot until browned.
- Pour the orange sauce over the chicken and stir well.
- Place a trivet inside the pot and set an oven-safe bowl with rinsed rice and water on top.
- Close the lid and cook on high pressure for 4 minutes.
- Allow natural pressure release for 10 minutes before venting any remaining steam.
- Remove the rice bowl; thicken sauce with cornstarch mixed with water by sautéing briefly.
- Serve over rice garnished with green onions and sesame seeds.
