Ingredients
- 2 pounds lean ground beef
- 2 large eggs
- ¾ cup finely chopped yellow onion
- 3 cloves garlic, minced
- ½ cup Panko breadcrumbs
- 2 ½ pounds Yukon gold potatoes
- 3 tablespoons unsalted butter
- ½ cup milk (warmed)
- Ketchup and seasonings
Instructions
- Add water to the Instant Pot and place quartered Yukon gold potatoes on the trivet.
- In a mixing bowl, combine ground beef, eggs, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, garlic powder, salt, and pepper. Mix well.
- Shape the mixture into a loaf and place it on top of the potatoes in the pot.
- Set the Instant Pot to high pressure for 30 minutes, then let it naturally release pressure for 10 minutes.
- Remove the meatloaf carefully and mash the potatoes with butter and warmed milk until smooth; season as desired.
