  • 2 pounds lean ground beef
  • 2 large eggs
  • ¾ cup finely chopped yellow onion
  • 3 cloves garlic, minced
  • ½ cup Panko breadcrumbs
  • 2 ½ pounds Yukon gold potatoes
  • 3 tablespoons unsalted butter
  • ½ cup milk (warmed)
  • Ketchup and seasonings

Instructions

  1. Add water to the Instant Pot and place quartered Yukon gold potatoes on the trivet.
  2. In a mixing bowl, combine ground beef, eggs, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, garlic powder, salt, and pepper. Mix well.
  3. Shape the mixture into a loaf and place it on top of the potatoes in the pot.
  4. Set the Instant Pot to high pressure for 30 minutes, then let it naturally release pressure for 10 minutes.
  5. Remove the meatloaf carefully and mash the potatoes with butter and warmed milk until smooth; season as desired.
  6. Slice the meatloaf and serve with mashed potatoes.
