  • 1 tablespoon olive oil
  • 1 cup finely chopped yellow onion
  • 1 cup finely chopped carrot (23 carrots)
  • 1 green bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 ½ cups dry green lentils (rinsed and drained)
  • 15 ounce can tomato sauce
  • ¼ cup ketchup
  • 2 tablespoons pure maple syrup (or brown sugar)
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons yellow mustard
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 ½ cups vegetable broth (or chicken broth or water)

Instructions

  1. Sauté onion, carrots, and green bell pepper in olive oil in the Instant Pot until soft. Add minced garlic and sauté briefly.
  2. Stir in green lentils, tomato sauce, ketchup, maple syrup, apple cider vinegar, yellow mustard, chili powder, salt, black pepper, and vegetable broth.
  3. Close the lid and pressure cook on high for 5 minutes; allow to naturally release for 10 minutes before venting.
  4. Serve the mixture on toasted buns with your choice of toppings.
