  • 1 cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 ¾ cups low sodium beef broth
  • 1 tablespoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 2 cups elbow macaroni pasta (uncooked)
  • 30 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 1 ½ cups shredded cheddar cheese
  • chopped fresh parsley (optional, for serving)

Instructions

  1. Set your Instant Pot to the sauté function and brown the ground beef until crumbled and cooked through. Drain excess grease if desired.
  2. Add finely chopped onion and sauté for about two minutes until softened. Then, stir in minced garlic and chopped bell pepper, cooking for an additional minute.
  3. Pour in the low sodium beef broth while scraping any bits stuck to the bottom. Stir in Italian seasoning.
  4. Layer uncooked elbow macaroni on top without stirring, followed by canned diced tomatoes and tomato sauce.
  5. Close the lid, set the steam release valve to sealing position, and cook on high pressure for four minutes.
  6. Once cooking is complete, carefully perform a quick release by moving the valve to venting position.
  7. Stir gently until well combined; add shredded cheddar cheese and mix until melted.
