  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 1 pound ground beef (90% lean)
  • 4 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons tomato paste
  • 14.5 ounce can low sodium chicken broth
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can kidney beans (rinsed and drained)
  • 15 ounce can black beans (rinsed and drained)

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil and heat.
  2. Add chopped onion; cook until soft, about 2 minutes.
  3. Stir in ground beef; brown while stirring for approximately 5 minutes. Drain excess grease if necessary.
  4. Mix in minced garlic and cancel Sauté mode.
  5. Add chopped bell pepper, chili powder, cumin, oregano, garlic powder, brown sugar, salt, black pepper, tomato paste, and chicken broth; stir well.
  6. Layer crushed tomatoes and beans on top without stirring.
  7. Secure the lid; set steam release valve to sealing. Pressure cook on high for 15 minutes.
  8. Allow natural pressure release for 10 minutes before quick-releasing remaining pressure.
  9. Stir chili; use Sauté mode to thicken if desired.
