For the Biscuit Dough:

  • 1 tbsp baking powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh chives

  • 1 tbsp chopped fresh dill

  • 1 cup cottage cheese (full-fat for best texture)

  • ⅓ cup cold unsalted butter, cubed

  • ¼ cup milk (or more, if needed)

For Brushing (Optional):

  • 1 tbsp melted butter

  • Pinch of dried herbs or garlic powder for garnish


Instructions

Step 1: Preheat and Prep
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper and set aside.

Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, pepper, garlic powder, and onion powder.
Stir in the chopped fresh herbs until evenly distributed.

Step 3: Cut in the Butter
Add the cold, cubed butter to the dry mixture.
Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs with small pea-sized pieces of butter.

Step 4: Add the Cottage Cheese
Stir in the cottage cheese until combined.
Gradually add the milk, starting with ¼ cup, and mix until a soft dough forms. Add more milk, 1 tablespoon at a time, if the dough seems too dry.

Step 5: Shape the Dough
Turn the dough onto a lightly floured surface.
Gently knead a few times to bring it together (avoid overworking).
Pat or roll the dough to about ¾-inch thickness.
Use a biscuit cutter or glass to cut out biscuits and place them on the prepared baking sheet.

Step 6: Bake the Biscuits
Bake for 12–15 minutes, or until the tops are golden brown and the biscuits are cooked through.
If desired, brush the tops with melted butter and sprinkle with extra herbs or garlic powder as soon as they come out of the oven.

Step 7: Serve and Enjoy
Serve warm with butter, honey, or your favorite savory spread.
