Instructions

  1. Melt the butter in a saucepan over low heat; set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, applesauce, milk, honey (or syrup), and vanilla until smooth. Stir in melted butter.
  4. Combine wet and dry mixtures gently until just incorporated; avoid over-mixing.
  5. Heat a griddle or skillet over medium heat and lightly grease it. Pour scant ¼ cup of batter onto the surface.
  6. Cook until bubbles form on top and edges are lightly browned (2-3 mins). Flip and cook until golden on the other side (about 2 mins).
