  • 1 1/4 cups rolled oats
  • 1/4 cup flaxmeal
  • 1/4 cup unsalted peanut butter
  • 1/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • Optional: 1/3 cup chopped nuts
  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line a cookie sheet with parchment paper.
  3. In a mixing bowl, mash the bananas until smooth and measure out 3/4 cup.
  4. Combine the mashed banana, peanut butter, rolled oats, and flaxmeal in a large bowl. Mix well.
  5. Stir in vanilla extract, coconut sugar, and cinnamon until fully combined.
  6. Fold in chopped nuts and chocolate chips if desired.
  7. Use a cookie scoop to form about 8 cookie balls on the prepared baking sheet.
  8. Lightly press each ball down with a fork to shape into round cookies.
  9. Bake for 16-18 minutes until golden brown.
  10. Let cool on the baking sheet for 15 minutes before transferring to a cooling rack.
