Ingredients
For the Casserole:
3 cups cooked, shredded chicken (rotisserie or leftovers work great)
1 (30 oz) bag frozen shredded hashbrowns, thawed
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1½ cups shredded cheddar cheese (plus more for topping)
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
2 tbsp melted butter
Optional Toppings:
½ cup crushed cornflakes or buttery cracker crumbs
2 tbsp melted butter (for topping)
Fresh parsley or green onions for garnish
Instructions
Step 1: Preheat & Prep
Preheat your oven to 375°F (190°C).
Grease a 9×13-inch baking dish or spray with nonstick cooking spray.
Step 2: Mix the Filling
In a large bowl, combine the shredded chicken, thawed hashbrowns, cream of chicken soup, sour cream, shredded cheese, garlic powder, onion powder, salt, pepper, and melted butter.
Stir well until everything is fully mixed.
Step 3: Assemble the Casserole
Spread the mixture evenly into the prepared baking dish.
Top with an extra ½ cup of shredded cheese (or more if you like it extra cheesy).
Step 4: Add Crunchy Topping (Optional)
If using, mix crushed cornflakes or crackers with melted butter and sprinkle evenly over the top of the casserole.
Step 5: Bake
Bake uncovered for 40–45 minutes, or until hot and bubbly and the top is golden brown.
If the top browns too quickly, cover loosely with foil during the last 10–15 minutes.
Step 6: Rest & Serve
Let the casserole sit for 5–10 minutes before serving to help it set.
