Ingredients

  • Ground lamb, beef, or chicken
  • Minced onion
  • Garlic
  • Feta cheese
  • Plain yogurt
  • Cucumber
  • Rice (white or brown)
  • Fresh herbs (mint and dill)
  • Olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground meat with onion, garlic, egg, feta cheese, Greek seasoning, and salt. Form into 1-inch meatballs.
  3. Place meatballs on a baking sheet and bake for 20 minutes until golden brown.
  4. Prepare tzatziki by mixing yogurt with grated cucumber, garlic, mint, dill, salt, and pepper.
  5. For lemon rice, warm olive oil in a saucepan, add cooked rice, lemon juice, and salt; stir gently.
  6. Assemble cucumber salad with diced tomatoes and cucumber drizzled with olive oil and salt.
