  • 1 bell pepper, diced
  • 1/2 yellow onion, diced
  • 1/2 cup canned black beans
  • 1/2 cup canned corn
  • 2 ½ cups Oaxaca or Monterey Jack cheese
  • 10 medium-sized flour tortillas
  • 4 tablespoons olive oil (divided)
  • 1 batch turkey seasoning or 1 pack of taco seasoning
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon table salt
  • ½ teaspoon onion powder
  • ½ teaspoon pepper

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add ground turkey, bell pepper, and onion; cook until the turkey is browned.
  3. Mix in black beans, corn, and seasonings with tomato paste; cook until heated through.
  4. Brush one side of a tortilla with oil, fill with cheese and turkey mixture, fold in half.
  5. Cook each quesadilla in a skillet until golden brown on both sides and cheese is melted.
  6. Let cool briefly before slicing into wedges.
