- 1/2 cup canned corn
- 2 ½ cups Oaxaca or Monterey Jack cheese
- 10 medium-sized flour tortillas
- 4 tablespoons olive oil (divided)
- 1 batch turkey seasoning or 1 pack of taco seasoning
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon table salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add ground turkey, bell pepper, and onion; cook until the turkey is browned.
- Mix in black beans, corn, and seasonings with tomato paste; cook until heated through.
- Brush one side of a tortilla with oil, fill with cheese and turkey mixture, fold in half.
- Cook each quesadilla in a skillet until golden brown on both sides and cheese is melted.
- Let cool briefly before slicing into wedges.
