  • ¼ tsp black pepper

  • 2 tbsp tomato paste

  • ¼ cup water

For Assembling the Quesadillas:

  • 4 large flour tortillas (burrito size)

  • 2 cups shredded cheddar cheese (or Mexican blend)

  • 1 tbsp butter or olive oil (for pan-frying)

Optional Fillings & Toppings:

  • ½ cup diced bell peppers (sautéed or raw)

  • ½ cup canned black beans (drained and rinsed)

  • Fresh cilantro, chopped

  • Sour cream

  • Salsa or pico de gallo

  • Guacamole

  • Jalapeño slices


Instructions

Step 1: Cook the Ground Beef

  1. In a large skillet, heat 1 tbsp olive oil over medium heat.

  2. Add the chopped onion and cook for 2-3 minutes until softened.

  3. Stir in the minced garlic and cook for 30 seconds until fragrant.

  4. Add ground beef to the skillet and cook until browned, breaking it up with a spatula.

  5. Drain excess fat if necessary.

  6. Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper.

  7. Add tomato paste and water, mixing until everything is evenly combined.

  8. Simmer for 4-5 minutes until the mixture thickens. Remove from heat and set aside.

Step 2: Assemble the Quesadillas

  1. Lay out the tortillas on a flat surface.

  2. On one half of each tortilla, sprinkle a generous layer of shredded cheese.

  3. Spoon the seasoned beef mixture over the cheese.

  4. Add any optional fillings like sautéed bell peppers or black beans.

  5. Top with a little more cheese for extra gooeyness.

  6. Fold the tortilla over to create a half-moon shape.

Step 3: Cook the Quesadillas

  1. Heat a clean skillet over medium heat and brush with butter or olive oil.

  2. Carefully place a quesadilla in the skillet. Cook for 2-3 minutes per side until golden brown and the cheese is melted.

  3. Repeat with the remaining quesadillas, adding more oil or butter as needed.

  4. Transfer cooked quesadillas to a cutting board and let them rest for 1 minute before slicing.

Step 4: Serve & Enjoy

  1. Slice each quesadilla into wedges.

  2. Serve hot with sour cream, salsa, guacamole, and your favorite toppings.

  3. Garnish with chopped cilantro and jalapeño slices for extra flavor and color.

Notes

Use a Good Melting Cheese – Cheddar, Monterey Jack, or a Mexican cheese blend works great.
Don’t Overfill – Too much filling makes flipping and cooking tricky.
Cook on Medium Heat – This allows the cheese to melt fully without burning the tortilla.
Let Them Rest – Give them a minute before slicing so the cheese doesn’t ooze out.
Make-Ahead Option – You can cook the beef filling in advance and store it in the fridge for up to 3 days.
