Instructions
Step 1: Cook the Ground Beef
-
In a large skillet, heat 1 tbsp olive oil over medium heat.
-
Add the chopped onion and cook for 2-3 minutes until softened.
-
Stir in the minced garlic and cook for 30 seconds until fragrant.
-
Add ground beef to the skillet and cook until browned, breaking it up with a spatula.
-
Drain excess fat if necessary.
-
Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper.
-
Add tomato paste and water, mixing until everything is evenly combined.
-
Simmer for 4-5 minutes until the mixture thickens. Remove from heat and set aside.
Step 2: Assemble the Quesadillas
-
Lay out the tortillas on a flat surface.
-
On one half of each tortilla, sprinkle a generous layer of shredded cheese.
-
Spoon the seasoned beef mixture over the cheese.
-
Add any optional fillings like sautéed bell peppers or black beans.
-
Top with a little more cheese for extra gooeyness.
-
Fold the tortilla over to create a half-moon shape.
Step 3: Cook the Quesadillas
-
Heat a clean skillet over medium heat and brush with butter or olive oil.
-
Carefully place a quesadilla in the skillet. Cook for 2-3 minutes per side until golden brown and the cheese is melted.
-
Repeat with the remaining quesadillas, adding more oil or butter as needed.
-
Transfer cooked quesadillas to a cutting board and let them rest for 1 minute before slicing.
Step 4: Serve & Enjoy
-
Slice each quesadilla into wedges.
-
Serve hot with sour cream, salsa, guacamole, and your favorite toppings.
-
Garnish with chopped cilantro and jalapeño slices for extra flavor and color.
Notes
Use a Good Melting Cheese – Cheddar, Monterey Jack, or a Mexican cheese blend works great.
Don’t Overfill – Too much filling makes flipping and cooking tricky.
Cook on Medium Heat – This allows the cheese to melt fully without burning the tortilla.
Let Them Rest – Give them a minute before slicing so the cheese doesn’t ooze out.
Make-Ahead Option – You can cook the beef filling in advance and store it in the fridge for up to 3 days.
