  • 4 ears of corn (husked)
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled cotija cheese
  • Juice of 1 lime
  • Zest of 1 lime (optional)
  • 8 small flour or corn tortillas

Instructions

  1. Season both sides of the ribeye steaks with salt and pepper. Let them rest at room temperature for about 30 minutes.
  2. Preheat your grill to medium-high heat. Grill the husked corn for about 10-15 minutes, turning occasionally until charred. Let cool and cut off the kernels.
  3. Grill the seasoned ribeye steaks for about 5-7 minutes per side or until desired doneness is reached. Allow them to rest before slicing thinly.
  4. In a mixing bowl, combine mayonnaise, sour cream, cilantro, cotija cheese, lime juice, and zest. Mix well.
  5. Warm tortillas on the grill or in a skillet. On each tortilla, layer sliced steak, grilled corn kernels, and the elote topping mixture.
