  • ½ cup molasses
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and gather all ingredients.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a stand mixer bowl, cream together the butter and brown sugar until light and fluffy. Mix in molasses, egg yolk, and vanilla.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed. Form dough into a disk and wrap in plastic wrap; chill for at least two hours.
  5. Roll out chilled dough on a floured surface to about ¼-inch thickness. Cut shapes with cookie cutters and place on parchment-lined baking sheets.
  6. Bake for 7–9 minutes for medium cookies or about 5–7 minutes for mini cookies. Allow to cool before decorating.
