Ingredients
For the Garlic Butter Lobster:
1½ cups cooked lobster meat (tail or claw, chopped)
3 tbsp unsalted butter
3 garlic cloves, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp chopped fresh parsley
1 tsp chopped chives or green onions
Salt and pepper, to taste
Pinch of crushed red pepper flakes (optional)
For the Sourdough Base:
4 slices sourdough bread
1 tbsp olive oil or softened butter (for toasting)
1 small garlic clove (halved, for rubbing toast)
Extra chopped herbs and lemon wedges, for garnish
Instructions
Step 1: Toast the Sourdough
Brush both sides of sourdough slices with olive oil or butter.
Toast in a grill pan or skillet over medium heat until golden and crisp on both sides.
Rub one side of each slice lightly with a cut garlic clove for added flavor.
Set aside on a serving plate.
Step 2: Make the Garlic Herb Butter
In a large skillet over medium heat, melt 3 tbsp butter with 1 tbsp olive oil.
Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
Stir in lemon juice, zest, chopped parsley, chives, salt, pepper, and red pepper flakes if using.
Step 3: Add the Lobster
Add the cooked lobster meat to the skillet and gently toss in the garlic butter.
Sauté for 2–3 minutes until warmed through and fully coated in butter.
Remove from heat.
Step 4: Assemble the Toast
Top each slice of garlic-rubbed sourdough with a generous spoonful of garlic butter lobster.
Drizzle a little extra garlic butter from the pan over the top.
Garnish with more chopped herbs and a squeeze of fresh lemon juice.
Step 5: Serve Immediately
Serve warm with a crisp green salad or roasted vegetables. Perfect as a main or shared appetizer.
