8 slices soft sandwich bread (white or brioche)

½ tsp cinnamon (optional)

Instructions
Step 1: Make the Cheesecake Filling
-
In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
-
Gently fold in the chopped strawberries.
-
Set aside while you prepare the bread.
Step 2: Assemble the Sandwiches
4. Lay out the bread slices on a flat surface.
5. Spread a generous layer of the strawberry cheesecake filling onto 4 slices.
6. Top each with the remaining slices to form sandwiches.
7. Press the edges together lightly to seal.
Step 3: Prepare the Egg Coating
8. In a shallow dish, whisk together the eggs, milk, sugar, and cinnamon (if using).
9. Dip each sandwich into the mixture, coating both sides completely.
10. Let any excess drip off.
Step 4: Fry the Sandwiches
11. Heat a non-stick skillet over medium heat and add 1 tbsp butter.
12. Place the sandwiches in the skillet (in batches if needed).
13. Fry each side for 2–3 minutes, or until golden brown and crispy.
14. Remove from the pan and place on a paper towel to absorb excess butter.
Step 5: Garnish & Serve
15. Dust with powdered sugar and top with extra strawberries.
16. Drizzle with maple syrup or honey if desired.
17. Serve warm and enjoy the melty, fruity delight.
Notes
Use Soft Bread – White or brioche bread works best for soaking up the egg mixture.
Don’t Overfill – Too much filling can cause the sandwich to split when frying.
Press Lightly – Sealing the edges helps keep the filling inside while cooking.
Low & Slow – Cook over medium heat to ensure the bread crisps without burning.
Serve Immediately – These are best eaten fresh while warm and crispy.
