3 medium yellow onions, thinly sliced

½ tsp salt

1 tsp sugar (helps caramelize the onions)

2 cloves garlic, minced

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

2 tbsp all-purpose flour

1 cup vegetable or beef broth (low sodium)

½ cup heavy cream

1 lb potato gnocchi (store-bought or homemade)

1 cup shredded Gruyère cheese (or Swiss)

½ cup shredded mozzarella (for extra melt)

Instructions
Step 1: Caramelize the Onions
Heat butter and olive oil in a large skillet over medium heat.
Add the sliced onions, salt, and sugar.
Cook, stirring often, for 20–25 minutes, until the onions are deeply golden and soft.
Add garlic and thyme during the last 2 minutes of cooking.
Step 2: Build the Sauce
Sprinkle flour over the onions and stir well to coat. Cook for 1 minute.
Slowly add broth, stirring constantly to avoid lumps.
Pour in the heavy cream and bring to a gentle simmer.
Step 3: Add the Gnocchi
Add gnocchi directly into the sauce.
Cover and cook for 5–7 minutes, stirring occasionally, until gnocchi is soft and the sauce is thickened.
Season with salt and pepper to taste.
Step 4: Add the Cheese
Sprinkle Gruyère and mozzarella evenly over the top.
If your skillet is oven-safe, place it under the broiler for 3–5 minutes, until the cheese is bubbly and golden.
If not, cover with a lid and let the cheese melt on the stovetop for 2–3 minutes.
Step 5: Serve & Enjoy
Let the dish cool slightly before serving.
Garnish with chopped parsley if desired and serve warm.
