Ingredients
- 2 lbs beef short ribs
- 3 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- Salt and pepper, to taste
- 6 slices of toasted baguette
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- In a Dutch oven over medium-high heat, heat olive oil. Season beef short ribs with salt and pepper, then sear until browned on all sides. Remove from pot and set aside.
- Reduce heat to medium; add butter and sliced onions to the pot. Cook for 25-30 minutes until golden brown and caramelized. Stir in minced garlic for an additional minute.
- Return short ribs to the pot. Add beef broth, Worcestershire sauce, bay leaf, and thyme; bring to a simmer. Cover and cook on low for 2-3 hours until tender. Shred meat from bones and return to pot.
- Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese. Broil for 2-3 minutes until cheese is melted.
- Serve hot garnished with fresh thyme if desired.
