  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste
  • 6 slices of toasted baguette
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. In a Dutch oven over medium-high heat, heat olive oil. Season beef short ribs with salt and pepper, then sear until browned on all sides. Remove from pot and set aside.
  2. Reduce heat to medium; add butter and sliced onions to the pot. Cook for 25-30 minutes until golden brown and caramelized. Stir in minced garlic for an additional minute.
  3. Return short ribs to the pot. Add beef broth, Worcestershire sauce, bay leaf, and thyme; bring to a simmer. Cover and cook on low for 2-3 hours until tender. Shred meat from bones and return to pot.
  4. Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese. Broil for 2-3 minutes until cheese is melted.
  5. Serve hot garnished with fresh thyme if desired.
