  • 3 large eggs, separated
  • ½ cup cottage cheese
  • ¼ tsp cream of tartar
  • 1 tbsp almond flour (optional)
  • 1 tbsp coconut flour (optional)
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil or melted butter

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In one bowl, separate the egg whites and yolks. Add cream of tartar to the egg whites and whip until stiff peaks form.
  3. In another bowl, mix egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
  4. Gently fold the whipped egg whites into the cottage cheese mixture until just combined.
  5. Drop dollops of the mixture onto the prepared baking sheet and shape them into rounds about ½ inch thick. Optionally sprinkle with sesame seeds or herbs.
  6. Bake for 25-30 minutes until golden and firm to touch. Cool on a wire rack.
