Ingredients
- 3 large eggs, separated
- ½ cup cottage cheese
- ¼ tsp cream of tartar
- 1 tbsp almond flour (optional)
- 1 tbsp coconut flour (optional)
- ½ tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil or melted butter
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In one bowl, separate the egg whites and yolks. Add cream of tartar to the egg whites and whip until stiff peaks form.
- In another bowl, mix egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
- Gently fold the whipped egg whites into the cottage cheese mixture until just combined.
- Drop dollops of the mixture onto the prepared baking sheet and shape them into rounds about ½ inch thick. Optionally sprinkle with sesame seeds or herbs.
- Bake for 25-30 minutes until golden and firm to touch. Cool on a wire rack.
