  • 2 Tablespoon butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives

Instructions

  1. Preheat oven to 375°F.
  2. In a large skillet, melt butter with olive oil. Season top sirloin cubes with salt and pepper and brown on all sides (6-8 minutes).
  3. Add chopped onions and carrots; sauté for 4-5 minutes until softened.
  4. Sprinkle flour over the mixture, stir well for 1-2 minutes, then pour in apple cider and beef broth; bring to boil.
  5. Transfer to an oven-safe pan, cover tightly, and bake for 1 – 1½ hours.
  6. Meanwhile, boil potatoes in salted water until tender. Drain, mash with milk, sour cream, cheese, and chives until creamy.
  7. Serve generous portions of mashed potatoes topped with hearty apple cider stew.
