  • 3 Tbs granulated sugar
  • 3 Tbs light brown sugar
  • 1/4 cup finely ground almond flour
  • 1/4 cup all-purpose flour (can also use GF all-purpose flour)
  • Pinch of salt
  • 1/4 tsp cinnamon
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup praline pecan pieces
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine granulated sugar, light brown sugar, almond flour, all-purpose flour, salt, cinnamon, baking powder, and baking soda.
  3. Melt the vegan butter in a microwave-safe bowl (about 20 seconds) and mix in almond and vanilla extracts.
  4. Add the melted butter mixture to the dry ingredients and stir until combined.
  5. Fold in praline pecans and dried cranberries until evenly distributed.
  6. Shape the dough into four equal cookie portions and place on a parchment-lined baking tray.
