- Chicken Stock (4 cups / 1 liter, low sodium preferred)
- Chopped Tomatoes (2 cans, 14 oz each)
- Tomato Puree (1/4 cup / 75g)
- Onion (1 cup, finely diced)
- Carrot (1 cup, finely diced)
- Celery (1 cup, finely diced)
- Courgette/Zucchini (1 cup, finely diced)
- Garlic (4 cloves, finely diced)
- Fresh Basil (small bunch, finely chopped)
- Worcestershire Sauce (2 tsp)
- Italian Seasoning (1 heaped tsp)
- Sugar (1/2 tsp or to taste)
- Olive Oil (as needed)
Instructions
- In a large pot over medium-high heat, drizzle olive oil and sauté the onion, carrot, celery, and courgette until soft and light golden for about 15 minutes.
- Add garlic and season with salt and pepper; fry for another minute before stirring in the tomato puree for 1-2 minutes.
- Pour in chicken stock and chopped tomatoes; add Worcestershire sauce, Italian seasoning, sugar, and a Parmesan rind if desired. Simmer covered for about 20 minutes.
