Ingredients

  • Fresh Tortellini (10.5 oz / 300g)
  • Chicken Stock (4 cups / 1 liter, low sodium preferred)
  • Chopped Tomatoes (2 cans, 14 oz each)
  • Tomato Puree (1/4 cup / 75g)
  • Onion (1 cup, finely diced)
  • Carrot (1 cup, finely diced)
  • Celery (1 cup, finely diced)
  • Courgette/Zucchini (1 cup, finely diced)
  • Garlic (4 cloves, finely diced)
  • Fresh Basil (small bunch, finely chopped)
  • Worcestershire Sauce (2 tsp)
  • Italian Seasoning (1 heaped tsp)
  • Sugar (1/2 tsp or to taste)
  • Olive Oil (as needed)

Instructions

  1. In a large pot over medium-high heat, drizzle olive oil and sauté the onion, carrot, celery, and courgette until soft and light golden for about 15 minutes.
  2. Add garlic and season with salt and pepper; fry for another minute before stirring in the tomato puree for 1-2 minutes.
  3. Pour in chicken stock and chopped tomatoes; add Worcestershire sauce, Italian seasoning, sugar, and a Parmesan rind if desired. Simmer covered for about 20 minutes.
  4. Uncover and bring to a rapid simmer; add fresh tortellini and cook according to package instructions. Stir through chopped basil before serving.
