  • 3 pounds lamb shoulder (cut into 1 ½-inch pieces)
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ¼ cup all-purpose flour
  • 23 tablespoons olive oil (divided)
  • 1 large onion (diced)
  • 5 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup dry red grape juice
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1.5 pounds gold potatoes (cut into cubes)
  • 4 large carrots (chopped)
  • 1 cup green peas (frozen and thawed)

Instructions

  1. In a large Dutch oven, cook diced turkey turkey bacon over medium-high heat until crispy. Transfer to a plate, leaving the fat in the pot.
  2. Season lamb pieces with salt, garlic powder, and black pepper; dust with flour.
  3. In the same pot, heat olive oil and sear lamb until browned on all sides. Set aside.
  4. Sauté onions until translucent, then add minced garlic.
  5. Pour in beef broth, grape juice, tomato paste, thyme, and bay leaves; stir well.
  6. Return lamb and turkey turkey bacon to the pot and bring to a boil. Cover and simmer for about 1 hour and 30 minutes.
  7. Stir in cubed potatoes and carrots; cover and simmer for an additional 20–25 minutes until tender.
  8. Add thawed green peas; cook for another 10 minutes before serving.
