  • 2 1/4 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1/2 cup salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and cinnamon. Mix in the melted butter and press firmly into the bottom of a baking dish.
  2. In another bowl, beat together cream cheese until smooth. Gradually add sugar and flour, followed by sour cream and vanilla extract. Mix in ground cinnamon before adding eggs one at a time.
  3. Pour the cheesecake mixture over the crust in the baking dish. Bake for about 50 minutes until set but slightly jiggly in the center.
  4. While baking, mix chopped apples with brown sugar, cinnamon, nutmeg, and lemon juice in a bowl.
  5. After baking, allow cooling slightly before topping with apple mixture and drizzling caramel sauce on top. Refrigerate for at least four hours.
  6. For serving, whip heavy cream with powdered sugar and vanilla until soft peaks form; top bars with whipped cream.
