  • 1 lb boneless skinless chicken breast or thighs
  • 2 cups chicken broth
  • 1 cup uncooked long grain white rice
  • 1 medium zucchini
  • Lemon juice
  • Olive oil
  • Fresh herbs (parsley, oregano, thyme)
  • Spices (smoked paprika, cumin, garlic powder)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9 x 13-inch baking dish with nonstick cooking spray.
  2. In the baking dish, combine diced chicken with lemon juice, olive oil, parsley, oregano, thyme, smoked paprika, seasoned salt, cumin, onion powder, garlic powder, black pepper, turmeric, and cayenne. Marinate for 30 minutes.
  3. Add uncooked rice and grated zucchini to the chicken mixture. Pour in chicken broth and stir well.
  4. Cover tightly with foil and bake for 45-60 minutes until rice is tender and liquid is absorbed.
  5. Fluff rice with a fork before serving. Enjoy topped with tzatziki sauce and fresh herbs.
