Ingredients
- 4 large baking potatoes
- 1 pound lean ground beef
- 1 small onion (chopped)
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 cup sour cream (plus extra for serving)
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- Chopped green onions and salsa for topping
Instructions
- Preheat the oven to 475°F. Scrub the potatoes and prick them with a fork.
- Bake the potatoes directly on the oven rack for 60-75 minutes until soft.
- In a nonstick pan, cook the ground beef and onion over medium heat until browned.
- Stir in taco seasoning and water; cook for another minute.
- Once potatoes cool, cut off the tops and scoop out the insides into a bowl. Mix with sour cream and milk until smooth, then fold in most of the beef mixture and cheese.
- Stuff the potato skins with the mixture, top with remaining cheese, and bake at 350°F for 20-25 minutes until heated through.
- Serve topped with green onions, salsa, and extra sour cream.
