Ingredients
2 cups granulated sugar
½ cup whole milk
½ cup unsalted butter
¼ cup unsweetened cocoa powder
½ tsp salt
1 tsp vanilla extract
3 cups quick oats
1½ cups mini marshmallows
½ cup peanut butter (optional for creaminess and flavor)
Instructions
Step 1: Prepare Your Surface
Line a countertop or baking sheet with wax paper or parchment paper to drop the cookies onto.
Step 2: Make the Chocolate Base
In a medium saucepan, combine sugar, milk, butter, cocoa powder, and salt.
Bring to a gentle boil over medium heat, stirring constantly.
Once boiling, cook for 1 full minute, then remove from heat.
Step 3: Add Flavor and Texture
Stir in vanilla extract and peanut butter (if using) until smooth.
Add oats and mix until fully coated.
Fold in mini marshmallows last. Stir gently—some will melt slightly for a gooey texture.
Step 4: Drop the Cookies
Using a spoon or cookie scoop, drop spoonfuls onto prepared wax paper.
Let them cool and set at room temperature for 30–45 minutes until firm.
Step 5: Serve and Enjoy
Once set, enjoy immediately or store for later.
Notes
Use Quick Oats – They absorb better and give the perfect chewy texture
Don’t Overboil – Just 1 minute ensures they stay soft and fudgy
Mix Marshmallows Last – This keeps some whole and gooey
Customize – Add chopped nuts, shredded coconut, or mini chocolate chips
