Ingredients
-
4 cups potatoes, peeled and diced (Yukon gold or russet)
-
3 cups broccoli florets, fresh or frozen
-
1 small onion, chopped
-
2 cloves garlic, minced
-
3½ cups vegetable broth or chicken broth
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp smoked paprika (optional for depth)
-
1 cup milk (or cream for extra richness)
-
1½ cups shredded cheddar cheese
-
4 oz (½ block) cream cheese, softened
-
2 tbsp butter
-
Optional: 1 tbsp cornstarch + 2 tbsp water (for thicker texture)
Instructions
Step 1: Load the Crockpot
-
Add the diced potatoes, chopped onion, garlic, broccoli, and broth to the slow cooker.
-
Stir in salt, pepper, and smoked paprika.
-
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the vegetables are tender.
Step 2: Blend the Soup (Optional)
4. For a creamy texture, blend part of the soup with an immersion blender directly in the crockpot.
5. If you prefer a chunkier soup, skip this step or blend just half.
Step 3: Add the Creamy Goodness
6. Stir in milk, cheddar cheese, cream cheese, and butter.
7. Let the soup continue cooking on low for another 15–20 minutes until the cheese is melted and everything is well combined.
Step 4: Thicken (Optional)
8. If you want a thicker soup, mix cornstarch and water in a small bowl and stir it into the soup.
9. Cook for an additional 10 minutes until thickened.
Step 5: Serve & Enjoy
10. Ladle the soup into bowls and top with extra shredded cheese, fresh herbs, or a dollop of sour cream if desired.
11. Serve with warm bread, crackers, or a side salad.
Notes
Use Sharp Cheddar – It gives bold flavor and melts beautifully.
Cut Veggies Evenly – Ensures everything cooks at the same rate.
Don’t Overcook the Broccoli – Add it halfway if you like it firmer.
Blend to Your Liking – Full blend for a smooth soup or partial for texture.
Cream Cheese Tip – Soften before adding so it blends in smoothly.
