  • 23 pounds beef chuck roast (diced into 1-inch pieces)
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • 1 Au Jus gravy packet
  • ½ Lipton onion soup mix packet
  • 14.5 ounces beef broth
  • 10.5 ounces beefy mushroom soup
  • 1 tablespoon cornstarch

Instructions

  1. In a large mixing bowl, combine diced beef with olive oil, black pepper, garlic powder, and onion powder. Toss to coat.
  2. Heat a skillet over medium-high heat and sear the seasoned beef for about 2-3 minutes on each side until golden brown.
  3. In another bowl, whisk together beef broth, beefy mushroom soup, half of the onion soup mix packet, and Au Jus gravy packet until smooth.
  4. Transfer the seared meat to the crockpot and pour the gravy mixture over it; stir gently to combine.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. To thicken the gravy, mix cornstarch with cold water and stir into the crockpot about 5 minutes before serving.
