Ingredients
- 28-ounce bag frozen beef or chicken meatballs
- 20-ounce can pineapple chunks in 100% juice (reserve juice)
- 1 green pepper (diced)
- 1 cup brown sugar
- 2/3 cup vinegar
- 2 tablespoons soy sauce
- 3 tablespoons cornstarch
Instructions
- Drain the juice from the pineapple into a medium bowl; set aside.
- Place frozen meatballs in a 4-6 quart crock pot; layer with pineapple chunks and diced green pepper.
- In the bowl with the reserved pineapple juice, whisk in brown sugar until dissolved. Add vinegar, soy sauce, and cornstarch; mix to create the sauce.

- Cover and cook on low for 2 hours, then switch to high for an additional hour to thicken the sauce.
