Ingredients

For the Chicken Filling:
• 2 lbs boneless, skinless chicken breasts (or thighs)
• 1 packet ranch seasoning mix (or 2 tbsp homemade ranch seasoning)
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp black pepper
• ½ tsp paprika (optional for a touch of smoky flavor)
• ½ cup low-sodium chicken broth
• 6 oz cream cheese (softened and cut into chunks)
• ½ cup plain Greek yogurt or sour cream (adds creaminess)

For Serving:
• Sandwich buns or brioche rolls
• Lettuce or baby spinach (optional)
• Sliced tomato (optional)
• Pickles (for crunch and tang)
• Sliced cheddar or provolone cheese (optional)


Instructions

Step 1: Prepare the Chicken
Place the chicken breasts in the bottom of the Crock-Pot.
In a small bowl, mix together the ranch seasoning, garlic powder, onion powder, black pepper, and paprika.
Sprinkle the seasoning mix evenly over the chicken.
Pour the chicken broth around the sides (not directly over the seasoning).

Step 2: Slow Cook the Chicken
Cover the Crock-Pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours.
The chicken should be very tender and easy to shred with a fork.

Step 3: Shred the Chicken
Once cooked, remove the lid and shred the chicken directly in the Crock-Pot using two forks.
Stir the shredded chicken to mix it well with the remaining juices.

Step 4: Add the Creamy Ingredients
Add the cream cheese chunks and Greek yogurt (or sour cream) to the shredded chicken.
Stir until the cream cheese is fully melted and everything is well combined.
Cover and let cook on low for an additional 15–20 minutes to allow the flavors to meld.

Step 5: Assemble the Sandwiches
Toast the sandwich buns or brioche rolls if desired.
Pile the creamy ranch chicken high on each bun.
Add optional toppings like lettuce, tomato, cheese, or pickles for extra flavor and texture.
