Ingredients

4 white fish fillets (cod, tilapia, haddock, or similar)
½ cup grated Parmesan cheese
½ cup panko breadcrumbs
¼ cup all-purpose flour
1 large egg
1 tbsp water
½ tsp garlic powder
½ tsp dried Italian herbs (or oregano)
Salt and black pepper, to taste
2 tbsp olive oil (for frying)
Lemon wedges, for serving
Fresh parsley, chopped (optional, for garnish)


Instructions

Step 1: Set Up the Breading Station
In one shallow bowl, place the flour with a pinch of salt and pepper.
In the second, beat the egg with 1 tablespoon water.
In the third, mix Parmesan, panko breadcrumbs, garlic powder, and Italian herbs.

Step 2: Bread the Fish
Pat the fish fillets dry with a paper towel.
Dredge each fillet first in the flour (shake off excess), then dip into the egg mixture, and finally press into the Parmesan breadcrumb mixture until well coated on both sides.

Step 3: Cook the Fish
Heat olive oil in a large skillet over medium heat.
Add the fish fillets to the skillet (in batches if needed to avoid crowding).
Cook for 3–4 minutes per side, until golden brown and cooked through (fish should flake easily with a fork).

Step 4: Drain and Serve
Transfer the cooked fillets to a paper towel-lined plate to absorb excess oil.
Serve hot, garnished with chopped parsley and lemon wedges.

Notes

Use Fresh Fish – Mild, flaky white fish works best.
Don’t Overcook – Fish is done when it flakes easily and is opaque in the center.
Use Panko for Extra Crunch – Panko breadcrumbs give a crispier texture than regular ones.
