Ingredients
For the Mashed Potato Dough:
-
2 cups cold mashed potatoes (smooth and lump-free)
-
½ cup grated cheese (cheddar or mozzarella work great)
-
¼ cup all-purpose flour
-
1 large egg
-
1 garlic clove, minced
-
½ tsp salt
-
¼ tsp black pepper
-
¼ tsp smoked paprika (optional for flavor boost)
-
2 tbsp chopped fresh parsley (optional)
For Frying or Baking:
-
2–3 tbsp vegetable oil (for pan-frying)
-
Cooking spray (if baking)
Instructions
Step 1: Prepare the Mashed Potato Mixture
-
In a large mixing bowl, combine cold mashed potatoes, grated cheese, flour, egg, garlic, salt, pepper, and paprika.
-
Mix until a soft dough forms. The dough should be firm enough to roll but still pliable.
-
Stir in chopped parsley for extra flavor if using.
Step 2: Shape the Fries
-
Lightly flour a clean surface and roll out the dough into a rectangle about ½ inch thick.
-
Use a sharp knife or pizza cutter to cut the dough into fry-shaped sticks (about ½ inch wide and 3–4 inches long).
-
If the dough is too soft to handle, place it in the fridge for 15–20 minutes to firm up before cutting.
Step 3: Choose Your Cooking Method
To Pan-Fry:
-
Heat 2–3 tbsp of vegetable oil in a large non-stick skillet over medium heat.
-
Once hot, add the fries in batches without crowding the pan.
-
Cook for 2–3 minutes per side, or until golden brown and crispy.
-
Transfer to a paper towel-lined plate to drain excess oil.
To Bake:
-
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
Arrange the fries in a single layer on the baking sheet and spray lightly with cooking spray.
-
Bake for 20–25 minutes, flipping halfway through, until golden and crisp.
Step 4: Serve Hot and Enjoy
-
Serve the fries hot with your favorite dipping sauces.
-
Garnish with a sprinkle of fresh herbs or a pinch of salt if desired.
Notes
Use Cold Mashed Potatoes – Warm potatoes can make the dough too sticky.
Avoid Overmixing – Mix just until combined to keep the texture tender.
Chill Before Cooking – If the dough feels too soft, chilling it helps firm it up.
Don’t Crowd the Pan – Whether baking or frying, give the fries space to crisp up.
Double the Batch – These go fast, so consider making extra!
